Watch Graham Hornigold, executive pastry chef at Hakkasan Group, make strawberry and passion fruit tartlets. Using the sweet pastry he made in a previous video, Graham shows us how to roll the pastry out making sure it's 2/3mm thick. He then cuts out and rests the pastry before putting them into molds, chilling them and then blind baking them. He fills them with vanilla and passion fruit cream, an almond sponge and fresh strawberries and passion fruit.
